El Lagar del Soto Clásico Ecológico is our top quality extra virgin olive oil range produced from olives from olive trees registered as local ecological producers.
This oil is of limited production and is made from olives of the manzanilla cacereña variety.
DESCRIPTION I Premium Extra Virgin Olive Oil made solely from the manzanillacacereña variety from organic olive groves, using traditional dryland cultivation.
REGION | North of the province of Cáceres. Districts of Sierra de Gata, Las Hurdes, & Valle del Alagón (Extremadura)
ALTITUDE | 600 meters above sea level.
PRODUCTION | Limited. Plantations grown in the Natura 2000 Network of environmental protection areas.
VARIETY | 100% manzanilla cacereña.
METHOD OF HARVEST | Mainly by hand although umbrellas are used whenever possible to stop the olives hitting the ground.
HARVESTING PERIOD | From 15th October to 10th November.
EARLY HARVEST
EXTRACTION SYSTEM | Produced cold from the first extraction immediately after harvesting the fruit. Crushed at a controlled speed.
STORAGE | In stainless steel tanks inertised with gaseous nitrogen. Decanted prior to repose in the storeroom.
STORAGE CONDITIONS | Keep in a dark place.
BEST BEFORE DATE | 18 months after date of bottling.
